Oatmeal Creme Pie Cake

I promise this tasted better than it looked!!! The filling ended up being runnier then I thought once I put it on the cake, making the top layer just want to slide off. But BOY, OH BOY, DID IT MAKE THE KITCHEN SMELL SOOOO GOOD. A friend of mine had mentioned that I should make Oatmeal Creme Pie, but as a cake! I was confused and kept thinking for awhile, Oatmeal Creme Pie.. Oatmeal Creme Pie.. What the heck is "Oatmeal Creme Pie" A creamy oatmeal pie? How in the world do you make Oatmeal Creme Pie. As I thought for ever and was interested in this.. it finally dawned on me that they were thinking of little debbie cookies. I was thinking "banana cream", "oatmeal creme". DUH! Little Debbie Oatmeal Creme Pies. I use to love them when I was a freshman living in college dorms. But now it sounds too sweet and unhealthy. But I thought it sounded like an EXCITING experiment and something to figure out how to make. So I altered an Oatmeal Cake recipe that I found from allrecipes.com.. Adding more oats, canola oil, tweeking other ingredients, bit of vanilla, and also adding molasses to get more of the right flavor. I also tried to look at the ingredients on the Little Debbie Package. Definitely molasses and brown sugar. I ground the oats in order to have a smoother cake. Then the creme I used marshmallow puff, pwd sugar, vanilla, and water. It was a very very moist cake. Perfect texture, moist, and just the right ingredients. If only.. it was egg free! (This should be my next goal)

I would like to make the filling better, and maybe use Knox or better yet, Agar Flakes (vegan gelatin flakes). Also, make it fluffier. I think this would make an awesome cupcake, with the creme as a filling and lovely dollop on-top. And in a way .. with the oats it would be somewhat healthier? better digestion? eh? maybe. Maybe the creme can be made in a bit healthier way, so it is not so bad. 

Also, this makes me think -- Oatmeal Flax, creme filled cookies? Egg free?
